01 - Preheat the oven to 375°F.
02 - Heat a large skillet over medium heat. Add ground beef and cook, breaking it up with a spoon, until browned, about 5 minutes.
03 - Add finely chopped onion and minced garlic to the beef; cook for 2 to 3 minutes until softened.
04 - Stir in ground cumin, chili powder, smoked paprika, salt, and black pepper; cook 1 minute until fragrant. Remove from heat.
05 - Lightly grease a 9x13-inch baking dish and spread 1/2 cup of enchilada sauce evenly across the bottom.
06 - Lay out one tortilla; place approximately 1/3 cup beef mixture and 2 tablespoons shredded cheese down the center. Roll tightly and place seam-side down in the dish. Repeat with remaining tortillas.
